Sunday Rosemary Chicken Roast 350g

Meat

This hearty, low-carb meal combines rosemary-infused roasted chicken, tender and flavourful with a fragrant herbal kick, alongside dukkha-roasted butternut squash. The butternut is seasoned with dukkha, a Middle Eastern spice blend of nuts, seeds, and herbs, giving it a crunchy, nutty coating. Accompanying these are feta and spinach fritters, crispy and savoury, adding a creamy and slightly tangy element to the dish with their balance of spinach, feta, and eggs.

Benefits:

  1. High Protein: The rosemary chicken is a great source of lean protein, essential for muscle maintenance, tissue repair, and keeping you full for longer.
  2. Low in Carbohydrates: This meal is low in carbs, making it perfect for those on low-carb or keto diets. It supports stable blood sugar levels and promotes fat burning for energy.
  3. Healthy Fats: The inclusion of feta cheese in the fritters provides healthy fats that help with satiety, support brain function, and promote overall heart health.
  4. Nutrient-Rich Ingredients: Spinach is rich in iron, magnesium, and vitamins A and K, which support immune health, bone strength, and energy levels. Butternut squash is a source of vitamins A and C, as well as fibre, offering antioxidant benefits while being low in carbs. Dukkha is rich in healthy fats from seeds and nuts, along with antioxidants from spices like coriander and cumin.
  5. Supports Weight Management: The combination of high protein, healthy fats, and fibre from vegetables helps control hunger, keeping you fuller for longer without adding excess calories.
  6. Anti-Inflammatory Properties: The rosemary and spices in the dukkha blend, such as cumin and coriander, have anti-inflammatory and antioxidant properties, supporting overall health and reducing inflammation.
  7. Flavourful and Satisfying: The blend of savoury rosemary chicken, nutty dukkha-roasted butternut, and creamy, crispy spinach fritters creates a delicious, satisfying meal that doesn’t compromise on flavour while keeping carbs low.

This Sunday Roast Rosemary Chicken dish offers a wholesome, nutrient-dense meal with a balanced combination of lean protein, healthy fats, and low-carb vegetables, ideal for those seeking a tasty, low-carb option without sacrificing comfort or flavour.
